Description

A classic Marie Rose Sauce recipe, perfect for seafood and salads.

Ingredients

Scale
  • 150 ml (5.07 fl oz) Mayonnaise, high-quality
  • 40 ml (1.35 fl oz) Tomato Ketchup
  • few splashes Worcestershire Sauce
  • 1 Squeeze Lemon
  • dash Cognac / Brandy / Sherry (optional)
  • dash Tabasco Sauce (optional)
  • 1 pinch Paprika or Cayenne
  • Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Mix the Base Ingredients: Start by putting 150 ml of mayonnaise into a bowl, then adding 40 ml of ketchup and a few splashes of Worcestershire sauce. Give it a good stir until everything is evenly mixed, and the color brightens up.
  2. Tweak to Taste: Taste the mixture to see if you want to amp up the flavor. If it feels a bit bland, consider adding more Worcestershire sauce or a squeeze of lemon juice for a zing. It is easier to add than to take away, so be cautious.
  3. Check the Consistency: If the sauce is looking a tad thick, pour in a little lemon juice or extra ketchup to lighten it up. The sauce should have a smooth texture that is easy to drizzle.
  4. Final Taste Test: Give it one last taste before serving. Adjust the seasoning if it needs more oomph. If the sauce is too spicy, blend in some extra mayonnaise to tone it down. To achieve a pinker hue, feel free to add extra ketchup.

Notes

  • Storage Tips: Store in an airtight container in the fridge for up to 2-3 days. Do not freeze, as mayonnaise-based sauces do not freeze well.
  • Expert Tips: Using high-quality mayonnaise can elevate the taste. For a spicier version, swap ketchup for a chili sauce or add diced pickles for a tangy crunch.
  • Reheating Instructions: This sauce is served cold, so no reheating is necessary.
  • Serving Suggestions: Serve as a dip for vegetable crudités like cucumber and celery. Pair with seafood like prawns, crabsticks, or smoked salmon. Use as a salad dressing or a topping for chicken burgers.
  • Recipe Variations: For a vegan version, substitute mayonnaise with vegan mayonnaise.
  • Ingredient Notes: Select high-quality mayonnaise for the best flavor. If you are out of Worcestershire sauce, you may substitute it with Henderson’s Relish or soy sauce using the same measurements.
