Instructions

  1. Prepare the Peaches: Start by peeling and slicing your peaches. Choose ripe peaches for that juicy flavor; they should soften with a gentle squeeze.
  2. Mix Peach Filling: Toss the sliced peaches with cornstarch and grated fresh ginger, letting the flavors mingle. You will see the cornstarch starting to coat the fruit, making it glossy.
  3. Make the Crisp Topping: In a mixing bowl, combine the old fashioned oats, almond meal, sliced or slivered almonds, ground cinnamon, and sea salt. Stir until combined. If it appears too dry, add a bit of melted coconut oil or maple syrup to moisten the mixture.
