Description

A delicious Turkish dip made from sautéed carrots, yogurt, and spices, perfect as a starter or side dish.

Ingredients

Scale
  • 1 tablespoon (14 grams) butter, unsalted
  • 1 tablespoon (15 milliliters) olive oil, plus extra for topping
  • 500 grams (about 1 pound) carrots, coarsely grated
  • 200 grams (about 0.4 pound) plain yogurt, preferably thick or Greek yogurt
  • 1 clove garlic, mashed
  • 2 tablespoons (6 grams) fresh dill, finely chopped
  • 11/2 teaspoon salt
  • 50 grams (about 1.75 ounces) walnuts, chopped
  • Topping: 2 tablespoons (30 milliliters) olive oil
  • 1/21/2 teaspoon pul biber (Turkish red pepper flakes)
  • 11/2 teaspoon black pepper, freshly ground
  • 1 splash lemon juice

Instructions

  1. Sauté Carrots & Garlic: Start by heating the olive oil in a large pan over medium heat. Toss in the grated carrots and mashed garlic. Sauté until the garlic smells fragrant and the carrots soften slightly, about 5-7 minutes. Be careful not to overcook the carrots; you want them to retain a little crunch.
  2. Mix Yogurt & Spices: In a bowl, stir together the thick yogurt with salt, black pepper, and a splash of lemon juice until well combined. You should achieve a creamy consistency and zesty aroma.
  3. Combine Mixtures: Allow the sautéed carrots to cool briefly before mixing them into the yogurt blend. Combine everything evenly but avoid overmixing; a chunky texture is desirable.
  4. Chill & Serve: Refrigerate the mixture for about 20 minutes to help the flavors meld and for it to firm up slightly. Avoid chilling too long, as the carrots might become soggy. Serve with gluten-free crackers or fresh vegetables.

Notes

  • Storage Tips: Store leftover Havuc Tarator in an airtight container in the refrigerator for up to 4 days.
  • Expert Tips: Using thick yogurt provides the best texture. If the dip is too runny, strain the yogurt or adjust the amount to achieve a thicker consistency. A splash of lemon juice enhances the overall flavor.
  • Reheating Instructions: This dish is best served cold or at room temperature. There is no need for reheating.
  • Serving Suggestions: Serve with pita bread or crackers. Pair with grilled meats or vegetables. Include as part of a larger Mediterranean appetizer platter.
  • Recipe Variations: Add a squeeze of lemon for extra acidity. Mix in roasted red peppers for a different flavor profile. Incorporate feta cheese for a creamier option.
  • Ingredient Notes: Opt for Greek-style yogurt for a thicker texture in the final result. Use fresh dill for the best flavor, and consider chopping walnuts for texture.
