Description

Delicious strawberry goat cheese bruschetta with a perfect balance of flavors. Ideal for appetizers or light meals.

Ingredients

Scale
  • 1 baguette, cut into ¾” slices
  • 2 tablespoons (30 ml) olive oil
  • 8 ounces (227 g) goat cheese, softened
  • 3 ounces (85 g) cream cheese, softened
  • 2 tablespoons (42 g) honey
  • 1 pound (454 g) strawberries, chopped
  • 3 tablespoons (45 ml) white balsamic vinegar
  • Fresh basil leaves, chopped (amount as desired)
  • Flaky sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Step 1: Preheat your oven to 400°F (204°C). Line two baking sheets with parchment paper to prepare for toasting the bread evenly.
    Step 1
  2. Step 2: Arrange the sliced baguette pieces on the prepared baking sheets. Lightly brush each slice with olive oil using a pastry brush, ensuring even coverage on each side to aid browning and crispness.
    Step 2
  3. Step 3: Bake the baguette slices in the preheated oven for 8 to 10 minutes. Keep a close watch to catch when the bread reaches a golden color and firm texture. Remove from oven and cool on racks. Rotate baking sheets halfway through baking if you want even browning on all slices. Avoid over-toasting to prevent hard bread; remove at 8 minutes if you prefer some softness.
    Step 3
  4. Step 4: While the bread is toasting, add the goat cheese, cream cheese, and honey into the bowl of the food processor. Process until the mixture is smooth and creamy. If needed, scrape down the sides and process again. If the cheese mixture is too thick to spread, add 1 teaspoon of milk or cream and blend again until it reaches a spreadable consistency.
    Step 4
  5. Step 5: In a medium bowl, gently stir the chopped strawberries together with the white balsamic vinegar. Do this no more than 5 minutes before assembly to keep the strawberries from becoming mushy and to retain their fresh texture.
    Step 5
  6. Step 6: Spread a generous layer of the cheese mixture evenly over each toasted baguette slice, extending the spread all the way to the edges to help the toppings adhere. Top each slice with a spoonful of the strawberry and vinegar mixture.
    Step 6
  7. Step 7: Sprinkle with fresh chopped basil leaves, flaky sea salt, and freshly ground black pepper to finish. Serve immediately while the bread is still crisp and the flavors are vibrant.
    Step 7

Notes

  • Room Temperature: Store bruschetta in an airtight container at room temperature for up to 1 day. Avoid direct heat or sunlight.
  • Refrigeration: Keep assembled bruschetta in an airtight container in the refrigerator for up to 3 days. For best texture, assemble just before serving to prevent sogginess.
  • Freezing: Freezing assembled bruschetta is not recommended due to texture changes. Instead, freeze components separately in freezer-safe bags for up to 1 month and thaw in the refrigerator before assembling.
  • If your toasted bread slices become too hard, reduce the toasting time to about 8 minutes to retain slight softness. Rotate baking sheets halfway through toasting for even color and texture.
  • To prevent the goat cheese mixture from becoming too dense to spread, add 1 teaspoon of milk or cream and blend again for a smoother texture.
  • If the strawberry topping seems too wet or mushy, wait to mix the strawberries with the balsamic vinegar until just before serving — no more than 5 minutes prior.
  • Spreading the cheese mixture all the way to the edges of the bread slices helps the toppings stick better and prevents sliding.
