Description

Delicious no-bake Strawberry Funfetti Energy Bites that are perfect for a quick snack or pre-workout boost.


Ingredients

  • 1 cup (150g) chopped dried strawberries
  • 1/2 cup (128g) almond butter
  • 1/3 cup (40g) ground flaxseed
  • 1/3 cup (2 oz.) finely chopped white chocolate
  • 1/4 cup (85g) honey
  • 2 tablespoons (28g) rainbow sprinkles
  • 1 1/2 tablespoons (21g) chia seeds
  • 21/2 teaspoons (10ml) vanilla extract

Instructions

  1. Mix Your Ingredients: Start by mixing the rolled oats, almond butter, honey, and vanilla extract in a large bowl. Blend everything until you have a sticky mixture that holds together, ensuring there are no dry spots. Avoid overmixing to maintain the right texture.
  2. Add the Funfetti & Strawberries: Gently fold in the rainbow sprinkles and diced dried strawberries. The mixture will become colorful and vibrant. Careful not to mash the strawberries too much to keep the texture of your bites intact.
  3. Scoop & Roll Into Balls: Scoop out a tablespoon of the mixture and roll it into a ball using your hands. It may be sticky but should maintain its shape well. Place the balls directly onto a plate or a baking sheet lined with parchment paper. Do not roll them too tightly, as this may make them difficult to bite later.
  4. Chill Before Enjoying: Refrigerate the plate of energy bites for about 30 minutes. This helps to firm them up and improves their texture. Be mindful not to forget them in the fridge, as over-chilling may make them challenging to remove.
