Description
A colorful and hearty vegetarian dish made by baking mixed vegetables and eggs on a sheet pan.
Ingredients
Scale
- 1 green bell pepper, cored and thinly sliced
- 1 orange bell pepper, cored and thinly sliced
- 1 red bell pepper, cored and thinly sliced
- 1 medium red onion, halved then thinly sliced
- 6 large eggs
- 1/2 bunch fresh parsley, chopped, for garnish
- 1 Roma tomato, diced
- Feta, for garnish (optional)
- Kosher salt
- Ground black pepper
- Extra virgin olive oil
- 11/2 teaspoon ground cumin
- 11/2 teaspoon Aleppo pepper (or red chili flakes)
- 21/2 teaspoons za’atar (or Italian seasoning)
Instructions
- Preheat the Oven: Start by warming up your oven to 375 degrees F. You will want a nice even heat to make sure everything cooks just right. It should smell warm and cozy when it is ready. Make sure you wait until it is fully preheated or your veggies might end up unevenly cooked.
- Prepare the Vegetables: Chop up your choice of veggies into bite-sized pieces and spread them across a sheet pan. You want a colorful mix, and the smell of fresh veggies will get you excited. Do not overcrowd the pan, or they will steam instead of roast, which means no crispy edges!
- Drizzle with Olive Oil: Gently drizzle some olive oil over the veggies, covering them well. This will help them get that lovely roasted flavor. As you do this, the rich aroma of the oil will start to fill the kitchen. Just be careful not to drown them; a light coating is all you need!
- Roast Until Tender: Slide the pan into your preheated oven and let the veggies roast for about 10 minutes. You are looking for them to become tender and slightly browned. Keep an eye on them to avoid burning; stir them halfway for even cooking.
- Create Pockets for Eggs: Once the veggies are ready, use a wooden spoon to make little pockets in the mix. This helps to hold the eggs in, keeping those beautiful yolks intact. The veggies should be soft and aromatic at this point—just try not to break them during this process!
- Add the Eggs: Crack the eggs carefully into the pockets you have made. It is best to do this one by one in a separate dish, so you do not risk breaking a yolk directly on the pan. You will begin to smell the eggs start to cook, which is always a good sign.
- Bake to Finish Cooking: Put the pan back in the oven and bake until the eggs are just set. You will know they are ready when the whites are firm but the yolks are still soft. Keep an eye on the time; overcooking can lead to rubbery eggs, which we definitely want to avoid!
- Enjoy Right Away: Once they are done, take them out and let them cool for a moment. The colors will be vibrant, and the smell will be inviting. Serve it warm and dig in; it is a great way to enjoy a hearty meal without fuss.
Notes
- Storage Tips: Leftovers will keep for up to 3 days in the fridge. Store in airtight glass containers. It is delicious at room temperature or warmed through.
- Expert Tips: If egg whites are not cooking through, consider increasing the cooking time by 2-3 minutes and double-check that your oven is properly preheated. When roasting vegetables, a shorter roasting time will help prevent them from becoming mushy—try 10 minutes before adding the eggs. For intact egg yolks, gently crack each egg into a small bowl before placing it into the vegetable pockets in the pan. If eggs seem to burn, keeping a close eye on them the last few minutes will help you adjust the timing better. For easier cleanup, a good drizzle of high-quality olive oil will help prevent sticking, making serving simpler.
- Reheating Instructions: To reheat, warm the leftovers in the oven at 350 degrees F for about 10 minutes.
- Serving Suggestions: Serve with crusty bread for dipping, pair with a fresh salad for a light meal, or accompany with batata harra for a flavorful side.
- Recipe Variations: Add cooked chorizo or sausage for protein, incorporate spinach for added nutrition, or replace za’atar with fresh herbs for unique flavor.
- Ingredient Notes: Select fresh seasonal vegetables for the best flavor and quality. You can substitute Feta with goat cheese or grated parmesan if desired. Egg whites only can be used instead of whole eggs if preferred.
