- 1 cup whole rolled oats (100 grams)
- 3/4 cup light brown sugar, packed (165 grams)
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp cinnamon
- 1 and 1/4 cups of the peach filling (measured)
- 1/2 cup powdered sugar (58 grams)
- 1 tbsp water or any type of milk
- 1/2 tsp vanilla extract

Instructions
- Preheat Oven & Prepare Pan: Start by preheating your oven to 375 degrees F. Line a 9×9 metal pan with parchment paper for easy removal later.
- Mix the Base Together: In a medium bowl, whisk together 1 and 1/2 cups all-purpose flour, 1 cup whole rolled oats, 3/4 cup light brown sugar, 3/4 tsp baking soda, 1/4 tsp salt, and 1/2 cup of melted salted butter until the mixture resembles wet sand and smells sweet and buttery.
- Add in the Peaches: Gently fold in the diced peaches, 3 tbsp light brown sugar, 1/4 tsp cinnamon, pinch of nutmeg, 1/2 tsp lemon juice, 1 and 1/2 tsp corn starch, 1 and 1/2 tsp water, and 1/2 tsp vanilla extract until everything is evenly coated without overmixing.
- Spread & Layer: Carefully spread the mixture into the prepared pan, pressing down slightly to create an even layer.
- Top with Crumble: Sprinkle the remaining mixture over the top of the peach filling, creating tufts of crumble.
- Bake & Keep an Eye: Bake in the preheated oven for about 35 minutes until the bars start to turn golden and bubbly. If the edges darken too quickly, cover them with foil to prevent burning.
- Cool & Slice Bars: Allow the bars to cool completely in the pan before slicing them into pieces. They should feel firm to the touch. Using a sharp knife will help achieve clean slices.
