Description

A quick and easy mug omelet made in the microwave with fresh veggies.

Ingredients

Scale
  • 1 tbsp (15 ml) Extra virgin olive oil, for greasing
  • 2 large (approximately 100 g) eggs
  • Kosher salt, to taste
  • Black pepper, to taste
  • 1 tbsp (15 g) chopped bell peppers, any color
  • 1 tbsp (15 g) chopped fresh parsley
  • A couple leaves of baby spinach, washed and dried
  • Feta cheese, optional, for topping

Instructions

  1. Mix Eggs & Veggies: Start by whisking your eggs in a microwave-safe mug until frothy. Incorporate your chopped veggies, such as bell peppers and parsley, ensuring they are chopped small for thorough cooking.
  2. Season & Stir Well: Add a sprinkle of Kosher salt and black pepper to the mixture. Stir everything well, making sure that the seasonings coat the eggs and veggies evenly.
  3. Microwave Your Omelet: Place the mug in the microwave and cook for about 1 minute and 30 seconds. Watch closely; the eggs will puff up as they cook. If you see any spillage, reduce the cooking time in subsequent tries.
  4. Let It Rest Briefly: After microwaving, leave the mug in the closed microwave for about 1 minute. This resting time allows the omelet to finish cooking and become fluffier.
  5. Enjoy Your Creation!: Scoop out your fluffy omelet and serve immediately. It should be inviting and aromatic. If it feels too firm, it may have been microwaved for too long.

Notes

  • Storage Tips: Best served immediately; not suitable for long-term storage.
  • Expert Tips: If using fresh spinach, ensure it is washed and dried completely to avoid excess moisture in the omelet.
  • Open the microwave briefly to let steam escape when you see the eggs puff up to help prevent overflow.
  • For a lighter version, replace one whole egg with two egg whites.
  • Microwave vegetables briefly (10-15 seconds) if they seem undercooked before mixing them with the eggs.
  • A sprinkle of black pepper or your favorite herbs can enhance the flavor without adding calories.
  • Reheating Instructions: Not recommended as the omelet is best enjoyed fresh.
  • Serving Suggestions: Serve your mug omelet with a slice of toast for added texture, or pair it with a fresh fruit salad for a balanced meal. Enjoy it alongside a cup of coffee or tea.
  • Recipe Variations: Add zucchini or mushrooms for diverse flavors. Sprinkle fresh herbs like dill or chives for added freshness. Use your choice of cheese or omit cheese entirely as preferred.
  • Ingredient Notes: Select fresh and vibrant vegetables for the best taste. You can substitute extra virgin olive oil with any cooking oil of your choice if desired. Feel free to use any kind of cheese or skip it to suit your taste preferences.
