Description
Delicious Finnish Apricot Pinwheel Cookies, perfect for gifting or enjoying with tea or coffee.
Ingredients
Scale
- 8 oz cream cheese, softened
- 1 1/2 cups unsalted butter, softened
- 3 cups flour, plus more for rolling cookies
- 1 cup apricot jam
- Powdered sugar for dusting
Instructions
- Scoop & Roll Dough: Start by scooping out the dough and rolling it into balls. You want them to be evenly sized for a nice bake. The dough should feel slightly soft but not sticky. If it sticks to your hands, do not hesitate to add a bit more flour until it is easier to handle.
- Fill & Shape Pinwheels: Next, gently flatten each dough ball and add a dollop of apricot jam in the center. Carefully fold over the edges to create a little pocket. They should look adorable and hold the jam inside. Just remember to wet the corners with water to ensure they seal properly, or they might pop open while baking.
- Bake & Watch Closely: Place the filled cookies on a baking sheet lined with parchment paper and pop them in the oven. You will want to keep an eye on them for around 14 minutes until they turn a lovely golden color. If they look a bit too soft, resist the urge to bake them longer; they will firm up as they cool.
- Cool & Dust with Sugar: Once baked, take them out and let the cookies cool on a cooling rack. This is a key step to avoid the powdered sugar being absorbed into the cookies. Just wait until they are cool to the touch before dusting lightly with powdered sugar for a sweet finish.
Notes
- Store in an airtight container at room temperature for up to a week. Baked cookies can also be frozen.
- If the dough feels too sticky while rolling, add a tablespoon of flour at a time until manageable.
- When assembling your cookies, wetting the corners lightly with water can assist in keeping them securely closed while baking.
- For the best visual appearance, allow your cookies to cool completely before dusting them with powdered sugar to prevent absorption.
- If you have noticed your cookies spreading too much, you might want to chill the dough for about 30 minutes before rolling it out.
- When baking, check the cookies at the 10-minute mark to gauge if they need more time or can be taken out early.
