Description

A refreshing Cucumber Ranch Crack Salad perfect for summer gatherings, low in carbs and full of flavor.

Ingredients

Scale
  • 2 (480g) English cucumbers, sliced
  • 11/2 teaspoon (6g) kosher salt
  • 1/2 cup (60g) shredded cheddar cheese
  • 6 slices (180g) bacon, cooked and crumbled
  • 1/3 cup (80g) mayonnaise
  • 1/3 cup (80g) sour cream
  • 21/2 teaspoons (10ml) distilled white vinegar
  • 1 tablespoon (15g) ranch seasoning
  • Fresh herbs for garnish (such as dill or parsley)
  • 11/2 teaspoon (6g) kosher salt
  • 1/3 cup (80g) mayonnaise
  • 1/3 cup (80g) sour cream
  • 21/2 teaspoons (10ml) distilled white vinegar
  • 1 tablespoon (15g) ranch seasoning

Instructions

  1. Salt & Drain Cucumbers: Start by salting your sliced cucumbers generously. The salt is key for drawing out excess water, which helps keep your salad crisp. Let them sit for about 10-15 minutes and watch the water pool around them.
  2. Mix Ranch & Sour Cream: Next, whisk together the ranch dressing and sour cream until it is smooth and creamy. Take your time to mix slowly, avoiding lumps for a delightful consistency.
  3. Combine All Ingredients: Gently fold the drained cucumbers into the ranch mixture. Be careful not to squish the cucumbers; you want them intact for that perfect bite.
  4. Add Bacon Last: Just before serving, toss in the crispy bacon bits to keep them crunchy. Mix gently to combine.
  5. Chill & Serve: Let your salad chill in the fridge for about 30-60 minutes. This allows the flavors to infuse beautifully. If sitting too long, check for moisture build-up before serving and stir if needed.

Notes

  • Store in an airtight container in the fridge for up to 3 days. Stir before serving as some liquid may settle at the bottom.
  • Do not skip draining the cucumbers if storing to keep the salad from getting watery.
  • Slice cucumbers thin for more flavor absorption.
  • Let the salad sit for 30-60 minutes before serving to help enhance flavors and tastes.
  • For keeping bacon crispy, add it right before serving to maintain its crunchiness.
