- 1 cup (240 ml) full-fat Greek yogurt
- 1 banana, ripe with brown spots, sliced into rounds
- 1 tablespoon (12 g) brown sugar
- 1–2 tablespoons (21–42 ml) raw or local honey
- A handful of fresh berries (such as blueberries or raspberries)
- 1/4 cup (30 g) granola
- Chopped pecans or walnuts, or toasted pumpkin seeds for nut-free crunch
- Ground cinnamon or nutmeg for seasoning
Instructions
- Step 1: Slice the banana into rounds about 1/4 inch thick. Evenly sprinkle 1 tablespoon (12 g) of brown sugar over the banana slices. This sugar will help caramelize the bananas to a rich golden color and enhance their natural sweetness.

- Step 2: Heat a non-stick pan over medium heat. Place the banana slices in the pan in a single layer. Cook for about 3 to 4 minutes, or until the edges turn golden brown. Watch carefully to avoid burning; the aroma will be a good indicator when they are ready. If the bananas are browning too quickly after 2 minutes, reduce heat to medium-low and turn the slices every minute for even caramelization. If the bananas are not caramelizing well, sprinkle an additional teaspoon of brown sugar halfway through cooking.

- Step 3: In a bowl, add 1 cup (240 ml) of Greek yogurt. Drizzle 1 to 2 tablespoons (21–42 ml) of honey over the yogurt. Stir gently if desired to create a creamy base with a sweet floral flavor. Optionally, add 1 tablespoon of lemon juice to the yogurt before drizzling honey for a slight tang. If the yogurt is too thick, mix in 1 tablespoon (15 ml) of milk to achieve desired creaminess.

- Step 4: Gently place the warm caramelized banana slices on top of the honey-sweetened yogurt. The warmth from the bananas will slightly melt the cold yogurt, creating an enjoyable texture contrast.

- Step 5: Add optional toppings such as a handful of fresh berries, 1/4 cup (30 g) granola, or chopped nuts/seeds for texture and visual appeal. To enhance the crunch, toast granola in the pan for 1 to 2 minutes prior to adding. Sprinkle ground cinnamon or nutmeg over the bowl if desired. Serve immediately for best taste and texture.
