Description

  • 1/4 cup (60ml) fresh blackberries, mashed
  • 3/4 oz (22.5ml) thyme simple syrup
  • 3/4 oz (22.5ml) fresh lemon juice
  • 8 oz (240ml) sparkling water, club soda or kombucha
  • 1/4 ounce thyme simple syrup for dilution, if necessary

Instructions

  1. Mash the Blackberries: Start by mashing your fresh blackberries in a bowl. You will want them to break down into a chunky mixture, emitting a sweet aroma. This is where all that juicy goodness will come from, so do not be shy about really squishing them. Just watch out for blackberries that aren’t ripe; they will not mash well.
  2. Add Thyme Simple Syrup: Stir in your thyme simple syrup and mix until everything is well combined. The syrup will give your drink a lovely balance of sweetness with just a hint of herbal flair. If you find it to be too sweet, you might want to hold back a bit on the syrup. It is easy to get carried away!
