Description
A refreshing non-alcoholic peach bellini mocktail perfect for summer gatherings.
Ingredients
Scale
- 2 peaches (about 300g), peeled, pitted and sliced
- 2 cups (480ml) peach juice
- 2 cups (480ml) sparkling apple cider
- 1/2 cup (75g) fresh raspberries
- Ice
Instructions
- Blend Peaches & Juice: Start by tossing the frozen peach slices into a blender along with the peach juice. Blend thoroughly to achieve a lovely, thick mixture that smells sweet and fruity for a slush-like texture.
- Combine with Cider: Pour the peach mixture into a large pitcher. Gently stir in the sparkling cider, ensuring you preserve the effervescence while mixing.
- Serve Over Ice: Fill glasses with ice cubes, then pour the peach concoction over the ice for a refreshing drink.
- Add Garnishes: Top each glass with fresh raspberries for a pop of color and extra flavor.
Notes
- Best served fresh, but can be stored in the refrigerator for up to 2 hours before serving.
- For a smoother peach puree, consider adding a splash of water or more peach juice to thin it out.
- If your drink tastes too sweet, try cutting back on the peach juice or using less peach puree.
- Keep the cider’s fizz by gently mixing it in.
- For a colorful twist, blueberries can be used instead of raspberries as a garnish.
- Not applicable for this mocktail.
- Serve with a slice of peach on the rim. Pair with light appetizers like bruschetta or combine with a fresh fruit platter for a colorful display.
- Add a splash of lemon juice for extra zing. Substitute with another fruit puree like mango or raspberry. Try using flavored sparkling water instead of cider.
- Use fresh peaches for a vibrant flavor, or substitute with peach nectar if peaches are out of season.
