Description

A delicious Air Fryer Frittata perfect for a quick meal. Loaded with eggs, cheese, spinach, and smoked salmon.

Ingredients

Scale
  • 8 large eggs
  • 3 tbsp grated Parmesan cheese
  • 1/2 cup (100g) spinach leaves, roughly chopped
  • 10 1/2 oz (300g) cottage cheese
  • 3 1/2 oz (100g) smoked salmon, cut into strips
  • 1 bunch spring onions (scallions), finely chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning or dried dill
  • olive oil, in a spray bottle, as needed
  • few sprigs fresh dill

Instructions

  1. Whisk Eggs & Milk: Start by whisking the eggs until fully combined and slightly frothy. This step is crucial for getting a light texture in your frittata. Just be careful not to overbeat it, or it might puff too much when cooked.
  2. Add Vegetables & Cheese: Gently fold in your chopped vegetables and cheese until they’re evenly distributed. This isn’t just for flavor; the veggies also add a nice texture. Avoid large chunks though, as they might not cook evenly.
  3. Prepare Air Fryer Pan: Grab your air fryer pan and give it a good spray with cooking oil to prevent sticking. A nice shiny coating is what you want for easier removal after cooking.
  4. Pour In Mixture: Carefully pour the egg mixture into the prepared pan. This ensures even cooking, so every bite is flavorful. Do not overfill the pan, or it could overflow while cooking.
  5. Cook & Check Progress: Pop the pan into your air fryer and set it to cook. Keep an eye on it for a nice golden-brown top. Check it occasionally to avoid undercooking the center. If it browns too quickly, covering it with foil can help.
  6. Cool & Slice: Once it looks done, let the frittata cool for a few minutes. It will firm up a bit as it sits, which is great for slicing. Just be patient to ensure it holds its shape.

Notes

  • Storage Tips: Store leftovers in an airtight container in the fridge for up to 3-4 days. You can reheat in the air fryer for about 5 minutes at 360F or enjoy cold.
  • Expert Tips: Do not beat the eggs too vigorously; this will puff them up too much. Use leftover ingredients for customization. Pair with a side salad for a complete meal.
  • Reheating Instructions: Reheat in the air fryer at 360F for about 5 minutes or until warmed through.
  • Serving Suggestions: Pair with a fresh green salad or serve with whole grain toast for a hearty breakfast. Accompany with avocado slices for added creaminess.
  • Recipe Variations: Add bell peppers for a colorful twist. Include crumbled feta cheese for extra flavor. Replace smoked salmon with cooked bacon or sausage.
  • Ingredient Notes: When selecting your ingredients, opt for high-quality eggs and cottage cheese for better flavor. You may substitute cottage cheese with quark, ricotta, or cream cheese for a similar result.
